I had a question; what temperture do airsoft guns* start to not work in the cold? Or is that something no one really has ever found out?

*Spring guns are exempted from this arguement...

It varies between brands. My Systema gearbox has operated without flaw in 17 degree weather, but brands like JG like to strip something of the sort or crack a shell if temperatures drop below 25 or so.

If you have an HPA system you wont have any trouble at all down to sub zero temperatures, which is one reason I'm switching to it.

How would you think my 6+ year old CA would do with a new piston and hopup?

You'd do alright. CAs don't have a very strong spring in them which allows them to have less stress on the internals. You should survive the winter season.

Yeah down to 20 is usually ok for good AEGs.

Some notables:

Op: Gray Mountain (P98) - 17 degrees
Op: Night Hawk IV (P98) - 25 degrees
Op: Flurry (P98) - 28 degrees

Chances are you've been to one or more of these cold ops

Last week I had battery issues around 40 degrees. I am switching to lipo since I hooked up a fellow players lipo and it still pulled strong.
My GBB pistols didnt work either so I will be using the co2.
